At Mom’s, No One Gets A Pie More Than 24 Hours Out of the Oven

To Mom’s Apple Pie Company, I did not need an introduction. But to “Mom”, I did. Avis Cox is the “Mom” of Mom’s, the business manager who spends her days at her desk above the ovens managing her three shops: In Leesburg, Round Hill and Occoquan. She’d rather be hands on at the farm where a Mom’s crew harvests the fruits and veggies for their pies. They hand mix their own fruit blends and sweeten minimally so that we can savor the abundant flavors of fresh, preservative free, hand grown ingredients. Mom’s uses their own special crust recipes offering a traditional rolled crust or a crumbly textured topping for their pies. Mom’s is very discriminating about sources for additional fruits and vegetables. They traveled to Washington State and New York to find precisely the right apples grown and harvested with shared values. Mom’s is equally as choosy about their Kabocha squash, sweet potatoes and pumpkins for their sweet potato and pumpkin pies.

Tyson, son of Mom Avis, began his bakery career at four years old running customer orders from back to front. Today, he works the farm full time in season and manages bakers in the winter. Both Avis and Tyson are passionate about the self sourcing of fresh ingredients of their famous blueberry, blackberry, sweet potato, apple, strawberry/rhubarb and of course, pumpkin pies. Mom’s Apple Pie partners with Lost Corner Farm in Leesburg and also hosts a CSA site at each of their stores, May through October.

The goal at Mom’s is that no one gets a pie more than 24 hours out of the oven. They bake and prep from 6 a.m. to 2 p.m. Twenty five pies bake at a time in a rotating oven. To say the Mom’s Apple Pie shop is aromatic is an understatement. The pies are nectarous, ambrosial, sapid, savory, spicy, juicy, sweet, and royally delicious.
